Research Fellow in Oral Tribology and Digestion

Are you an ambitious researcher looking for your next challenge? Do you have an established background in tribology or oral processing and gastrointestinal digestion? Do you want to further your career in one of the UK’s leading research-intensive universities?

We are looking for a Postdoctoral Research Fellow to join a project funded by the Joint Programming Initiative - A Healthy Diet for a Healthy Life (JPI HDHL). You will join a highly dynamic, interdisciplinary team focusing on characterizing and understanding oral lubrication of ingredients and complex food matrices using elastomeric surfaces and correlating with sensory perception. You will also characterize the digestion profile of food matrices using internationally established in vitro digestion protocols. As a member of the Eat4Age international project, you will actively collaborate with experts in leading research institutions in Norway, France, Ireland and Israel, working alongside other Postdoctoral Research Fellows, technicians and PhD Students. You will be part of this consortium project characterizing oral tribological and digestion profiles of food matrices designed to optimize nutritional intake for the older adult population and address issues of malnutrition in the elderly.

You will design experiments to measure the friction generated by food ingredients in soft contacts relevant to oral processing with the aim of seeking correlations with sensory perception. You will also measure the kinetics of digestion of food matrices, with a particular focus on protein. This will involve integrating tribology measurements, surface science knowledge, rheology, imaging, biochemical assays, sensory science and statistical techniques to establish lubrication and disintegration mechanisms in the complex human oral environment and the upper gastrointestinal tract.

You will have a PhD in Food Science, Biochemistry, Material Science or a closely related discipline together with a strong background in colloid science. You will also have a positive attitude to collaborative research and the drive to make a significant contribution to making this ground-breaking project a success.
